Tasty Turkey Tacos

I'm still making some light and tasty meals to go hand in hand with my strenuous workouts.  These Tasty Turkey Taco's (can you say that 5 x's fast?!) get a real boost with the zucchini for added texture.


Ground turkey meat is an excellent choice for spice loaded dishes.  Since turkey can be somewhat bland it holds up well to a lot of spice combinations.

I cannot stop sautéing onions, garlic and bell pepper.  I usually add that combination to my meatloafs and meatballs.   

The zucchini was added because I forgot I had purchased them and didn't want them to go bad.  However this paired well with the turkey.

To round out my meal I added some black beans.  Maybe more dishes like this can keep me out of the Chipotle line.
 

Tasty Turkey Tacos
1 pkg ground turkey
1 med onion diced
1 green bell pepper
1 med zucchini chopped 
1 heaping tablespoon of crushed garlic
1 Sazon packet
1 tsp cumin 
2 tablespoons of tomato paste
1/4 cup Olive oil more or less
Corn or flour tortillas 
Lettuce
Tomatoes
Place olive oil in pan, sauté onion, bell pepper and zucchini.  Once the onion is translucent and the zucchini has softened a bit add the garlicaking sure to stir constantly so the garlic doesn't burn.  If you need to add more oil do so.  I season with the Sazon packet, a tsp of cumin, 2 tablespoons of tomato paste or salsa.  If the mixture is thick add a bit of water to loosen just a bit.  Add salt and pepper to taste.  I like to serve with flour or corn tortillas, lettuce, tomatoes and a generous squeeze of lime. Enjoy!



Homemade Almond Milk Chai Tea

Here's a homemade version of Almond Milk Chai Tea.  When you make it yourself you control the flavors and calories.

1 cup of raw almonds
3.5 cups of water
3 chai tea bags
2 tsp pure vanilla extract 
1 tsp cinnamon 
1 tsp allspice
2 tsp real maple syrup 

Soak almonds for 8-10 hours in 2 cups of water.  Drain water from almonds.

Boil 3.5 cups of water and add 3 chai tea bags and steep to your liking. Remove bags.

Place almonds, steeped tea, vanilla extract, cinnamon, allspice and maple syrup in a blender. Blend throughly.

Strain using a cheesecloth or strainer.
Taste if more spices or needed add now. Place in a container and refrigerate.

Dresser rehab

My family has returned home from their visit to Texas and I'm still a bit tired.  Well let me be honest, I am really tired from the late night girl chats and running around...but man oh man we had a blast!  It's funny how you don't see someone for a long time but when you reunite it's like you haven't missed a beat.  Hopefully this is the start of my cousin and I staying connected and not letting get so busy we forget to stay in touch.

Right before my cousin came to visit I decided to paint the dresser in the guest room.  I have a lot of dark wood in my house and decided to paint this handmade dresser white so it would make the guest room light and airy.  The effect of the color change was immediate and I'm glad it turned out so well.  I cannot wait to get my brushes on other pieces that are taking up space in my garage.

 
That hand you see in the sanding picture above is my hubby's.  I had to tag him in after getting cramps in my hands.  I want to try an ombré paint technique on a small dresser that I have.  But that will be in the near future.
