Coconut Chicken n Shrimp Cappelini

Between the frigid weather and my comprised health, this week has not been the best.  Today is the first time I have moved about freely with minimal effort.  My hubster is stuck in another state due to adverse weather conditions.  The condition that I speak of is snow.  This snow that has decided to grace us with its presence late in winter and is hitting a lot of the southern states.   So now I'm  hungry and a tad bit irritable, because I don't want to go out in the cold to grab some fast food.  After rummaging through my deep freezer, I found  a few boneless chicken breast and a bag of shrimp, I recently purchased from Trader Joe's.  My next stop is the refrigerator to see what I have on hand to make a complete meal.


Ok the bell peppers, onion and tomatoes will work.  The crushed garlic, coconut water and heavy cream will help me put a sauce together.


l always like to dice everything up before I start cooking.  I do need some better knives these are getting dull and that's not safe.

 
A quick sauté of the chicken and believe it or not the meal is near completion.  While the chicken cooks boil water for the Cappelini pasta.

 

Remove the chicken from the pan and let rest.  The blurry picture below shows a quick sauté of the onions, garlic, bell pepper and tomatoes.  Cube the chicken and return to pan.  Boil pasta for 2 min. Yep, you read that right you only need 2 minutes!  Drain the pasta promptly.


Add the shrimp and cook quickly and they should look like the letter C.  Add tumeric, ginger, salt and pepper to taste taste.  Add coconut water I used about 6 ounces and I used 1/4 cup of heavy cream to taste.  


Toss in the pasta and Voilà you have and island inspired pasta dish!  A Mama Lee's original recipe.  If you try the recipe let me know how it turned out.                                         



Here's a quick photo of the finished dish, and I made a sparkling ginger beer cocktail to round out my meal.  A home cooked meal beats fast food any day.

Phat Tuesday

As you guys already know, I am on a journey to a healthier lifestyle so instead of celebrating Fat Tuesday partying at the bar, I partied with the ladies at the gym.  I had a blast working out!  The energy was so high in my Zumba class I could've danced all night!   We rocked the beads, masks and crown in honor of Fat Tuesday.  My only complaint is my pants started slipping down!!! The horror!!! I was constantly grabbing and tugging at my pants, but I didn't want to stop dancing and change.  Yeah I was trying to be a Disco Diva in class instead of worrying about my pants.  I wish I could say I had this big drop in weight that made my pants fall down.  But no...I have had a gradual loss in weight.  My waist always shrinks first and my rear has been fighting my efforts mightily!  Never underestimate the power of the booty!  And with that said you Loves have a goodnight, I'm off to soak these ol bones.

New start update

Hey Loves in my recent posts, I have mentioned my workouts and/ or meal supplements so, I wanted to give you guys a real look at me and my protein shake.  Mind you, this is not the finished product of my body makeover, but I'm a work in progress.  Coming from a family of obese an inactive individuals, I have always worked hard at keeping the pounds at bay.  I must admit I have slacked off with my eating habits in recent months but, I am committed to make a real lifestyle change.  Some of my biggest challenges involve not eating regularly.  I sometimes go for more than 3 hrs without eating and   if you want your metabolism to work you need frequent mini meals.  To combat this problem I have set a timer.   I'm also on a quest to quell these carbohydrates cravings.  As far as my workouts,  I have added weight training, boxing and power hoop to my regular routine.  These added sessions are producing real changes in my body.  So far I'm happy with my results but I do need to boost my energy level. 
I hope this post encourages anyone that thinks they are too old, too fat, to out of shape to workout, to push those negative thoughts aside and just get MOVING!!!

Mmm...Mmm...Monday!


Well it's another Monday and another start to my grueling week in the gym.  My hair is natural and I have been wearing it in protective styles for the last 6 months.  All this time I'm spending in the gym has left me with little time or energy to do my hair.  What's a girl to do?  My solution is a Turban.  Turbans are a quick and stylish way to pull your look together.  They can compliment a casual or dressy look.  If you need help with a turban style, turn to YouTube for an endless array of video tutorials.  Check out my blog post from last week or my Instagram account to see how I rock my turban.

I'm so ecstatic that the color pink has been showing up in homes, and in every room.  It's no longer considered a feminine shade only seen in girl's rooms or nurseries.  Putting pink in a room can add instant sophistication and/or softness.  The many hues of pink can have different vibes.  Light pink has a soft and airy feel. Dark pink or fuchsia has a fiery and vibrant feel. No matter how you choose to put pink in your home, have fun with it and make sure it's what you love!

Low carb cabbage and Italian sausage


Hey loves, this is a really late post but...this new workout schedule has me exhausted at the end of the day. But I won't complain I'm happy.  I have amped up my exercises and increased my time in the gym, so I'm pretty pleased with that part of my routine.  My meal preps have been ho hum and I cannot bare to look at another salad or chicken breast. My solution...cabbage and turkey.  From the kitchen of yours truly, Sautéed Italian sausage and cabbage. This dish is so simple, I sautéed some cabbage, carrots,  pearl onions with a mix of Italian turkey sausage and ground turkey.  My favorite seasonings competed this meal and it was delicious.  I'm already planning to eat some for leftovers tomorrow and freeze the rest in single serving size containers. The best part of this meal is its low carb! Whoot whoot! This low carb diet is a struggle for a rice and pasta loving girl but, I will continue to create more recipes that have fewer carbs.  If any of you have some great low carb recipes, help a sister out!
